Citrus aroma comes from the volatile compounds held in the oil sacs of the peel. These compounds are extremely heat sensitive; in hot-air drying most of them evaporate and a bitter note remains. Because freeze-drying works under vacuum at low temperature, a significant part of these oils stays in the product.
The sliced form is processed with the peel on. The segmented interior and the ring of peel visible in cross-section create a strong visual signature, which is why it is preferred in beverage garnish and premium hospitality applications. The texture is light and crisp, softening quickly on contact with liquid.
Diced form is used mainly in breakfast and bar applications; powder in beverage blends, confectionery and bakery as a natural aroma and vitamin C source. Thanks to its citric character, orange powder reduces the need for added acid in formulations.
