Freeze Dried Peach

Peach is rich in carotenoid pigments and volatile aroma compounds. Both groups are heat sensitive; in conventional drying the colour fades and the characteristic aroma is largely lost. Freeze-drying preserves both properties to a large extent.

The product carries the orange-yellow tone and distinct aroma of fresh peach. Because of the high sugar content the taste profile is sweet and reduces the need for added sweetener. The texture is porous and light, dissolving quickly in the mouth.

Sliced form is used in snacking and breakfast applications; diced form in muesli, yoghurt toppings and bar production; powder as an aroma and colour source in beverages, dairy and ice cream.

Carotenoids are light sensitive; storing the product in opaque packaging extends colour stability.
