Freeze Dried Cauliflower

Cauliflower stands out as a rice and flour alternative in low-carbohydrate and gluten-free product development. Its neutral taste profile makes it usable as a carrier component in many formulations.

Freeze-drying preserves cauliflower's white colour; the yellowing seen in conventional drying does not occur with this method. As the floret structure is dried intact, the product gives an appearance and texture close to fresh when rehydrated.

Floret form is used in ready meals, soups and outdoor food; powder in low-carbohydrate flour blends, sauce bases, soup powders and infant food formulations. Cauliflower powder is an increasingly common ingredient in "cauliflower rice" and gluten-free dough applications.

The white colour is sensitive to oxidation; oxygen-barrier packaging extends colour stability.
