Leek belongs to the allium family and carries a milder, sweeter aroma than onion. This profile makes it a non-dominant aroma source in soup and sauce bases.
Freeze-drying preserves leek's volatile sulphur aroma compounds; in hot-air drying most of these are lost and only the fibrous structure remains. The product is cut and processed in ring form and keeps its light green-to-white colour transition.
Ring form is used in instant soups, sauce bases, ready meals, outdoor food and garnish applications. It rehydrates rapidly on contact with hot water and releases its aroma into the system.
Because the cut surface is wide the product tends to pick up moisture; packing at low relative humidity helps preserve the aroma.
